From Lahore and Punjab to Manchester: the story behind Zouk

Zouk’s food story begins long before our Manchester restaurant. Our family originates from Punjab in Pakistan, with roots in Lahore, a city celebrated across Pakistan and the wider Indian subcontinent for its food culture, street food, grilled dishes, breads, rice dishes and deeply flavoured cooking.

Food has been part of our family life for generations. Our grandmothers and our mother were major influences on the recipes, flavours and way we think about cooking today. That home-cooking heritage — generous food, bold spice and dishes made to bring people together — still influences what Zouk serves and what we want customers to be able to cook at home.

A family food business in Britain since 1979

Our grandfather came to the UK in the 1950s, and our father arrived in the 1960s as an eight-year-old boy. In 1979, our family opened its first restaurant in Bradford. That began a family involvement in the British food and restaurant business that now stretches back nearly five decades.

In 2006, we — two brothers working alongside our father — opened the first Zouk in Bradford. Three years later, in 2009, we opened Zouk in Manchester. The original Bradford Zouk no longer operates, but Manchester has been our home ever since and remains the heart of the Zouk brand today.

Zouk was created as a halal Indian and Pakistani restaurant, but from the beginning we also wanted room for creativity. Our menu is rooted in the cooking of Pakistan and India while allowing us to bring an Indian-subcontinent influence to seafood, grills, small plates, snacks, teas and dishes inspired by food from further afield.

That means Zouk is not about reducing Indian or Pakistani food to a single regional style. Our kitchen includes chefs with experience from different parts of India and the wider subcontinent, including Sri Lanka. Those regional influences sit alongside our own family background from Lahore and Punjab.

We remain closely involved in how the food should taste. Recipes are shaped by our chefs, our family memories and our own view of what makes a dish feel like Zouk: bold but balanced spice, strong aroma, generous flavour and food that people genuinely want to come back for.

Why family recipes matter to Zouk

Some of the strongest influences on our food came from the women in our family. Our mother and grandmothers helped shape our understanding of seasoning, marinades, curries, rice dishes and the small details that make home-cooked food memorable.

That matters because the Zouk spice range is not simply a collection of generic seasonings with our name on the label. The aim is to take the way we think about flavour in the restaurant and make it easier for customers to achieve satisfying results in their own kitchens.

Why we created Zouk spice tins for home cooks

Restaurant-style Indian and Pakistani cooking can look intimidating when a recipe appears to require a cupboard full of individual spices. Our Zouk at Home range is designed to remove some of that friction.

Each blend gives home cooks a practical flavour base for a particular style of food. You can use Zouk Tandoori Masala for tandoori chicken, paneer, fish and BBQ marinades; Zouk Biryani Masala for fragrant chicken, lamb or vegetable biryani; Zouk Garam Masala to add warmth and aroma to curries and dals; and Zouk Pilau Rice Seasoning for aromatic rice dishes.

The core range also includes Chaat Masala, Piri Piri and Hot BBQ Rub, giving customers options for street-food flavours, grills, chicken, vegetables and everyday seasoning.

We want the spice range to do something very simple: help people cook food they are proud to serve. You do not need to be a professional chef. The blends are made for real home kitchens, whether you are cooking a midweek curry, preparing biryani for family, marinating chicken for a barbecue or experimenting with Indian and Pakistani flavours for the first time.
