Tandoori masala and garam masala are both useful South Asian spice blends, but they are designed for different jobs in the kitchen.
What is tandoori masala used for?
Tandoori masala is closely associated with marinades, grilling and high-heat cooking. It is commonly mixed with yoghurt and used on chicken, paneer, fish, lamb and vegetables. Shop Zouk Tandoori Masala.
What is garam masala used for?
Garam masala is a broader aromatic blend used to bring warmth and fragrance to curries, dals, meat dishes, vegetables and marinades. It is often added towards the later stages of cooking. Shop Zouk Garam Masala.
Can you substitute one for the other?
They can overlap in some recipes, but they are not direct substitutes. If you are making a tandoori marinade, use tandoori masala. If you are finishing a curry or dal, garam masala is usually the more natural choice.
Do you need both?
If you cook a range of Indian and Pakistani dishes at home, having both gives you much more flexibility. Both are included in the Zouk Essential Indian Spice Collection.
