Flavours of Old Delhi

Step into the bustling lanes of Old Delhi and discover a food culture shaped by centuries of history. Around Chandni Chowk and Jama Masjid, street stalls, restaurants and family kitchens serve dishes influenced by the great Mughal cooking traditions, combining aromatic spices, rich sauces and smoky char-grilled meats.

Our new Flavours of Old Delhi class explores this distinctive style of cooking through a selection of kebabs, marinades and deeply flavoured curries.

What Will You Learn?

This class will introduce you to some of the techniques behind classic Old Delhi cooking.

You’ll learn how yoghurt, ginger, garlic and spices are used to create flavourful marinades, how to prepare and char-grill tender meats and how to build rich curry sauces using onions, tomatoes, yoghurt and fragrant spices.

Each guest will have their own cooking station and the class will be as hands-on as possible, with our chefs guiding you through every stage.

Flavours of Old Delhi Menu
Starters

Sikandari Chicken Tikka
Tender pieces of chicken marinated in yoghurt, ginger, garlic and aromatic spices before being char-grilled.

Lamb Boti Kebab
Marinated pieces of lamb grilled until tender and lightly charred, with a richly spiced Mughlai-style marinade.

Shami Kebab
Soft, delicately spiced lamb and lentil patties shaped by hand and shallow-fried until golden.

Main Courses

Chicken Changezi
A rich Old Delhi-style chicken curry cooked in a tomato, yoghurt and aromatic spice sauce.

Delhi Lamb Korma
Tender lamb cooked slowly with browned onions, yoghurt and warming spices to create a fragrant, deeply flavoured curry.

Side Dishes

Pilau Rice
Naan Bread

 

After the Class

Once the cooking is complete, your dishes will be served together as a banquet, giving you time to relax and enjoy the food you have made.

You will also leave with an easy-to-follow recipe pack so you can recreate your favourite Old Delhi dishes at home.
