Ingredients:
- 1 Chicken , about 2 Kg
- 100 ml vinegar
- 4 Red chillies( or less if you prefer it not too hot)
- 6 Garlic Cloves
- 2 tsp paprika Powder
- 1 tsp Golden caster sugar
- 2 tsp Zouk Piri Piri Spice
- 2 lemons, juiced
Method:
- Prepare the Marination : To begin making the marinade, first add garlic, red chilli, vinegar, paprika powder, sugar, Zouk Piri Piri spice and lemon juice to a food processor. Then, blitz the ingredients together until they form a smooth paste. Afterward, once the paste is ready, set it aside to allow the flavors to meld together. This step helps the ingredients fully combine, enhancing the overall taste before marinating the chicken.
- Piri Piri Spice : First, place the chicken in a shallow dish. Then, using a small knife, score the chicken all over with cuts about 1 cm deep. Next, pour the marinade over the chicken, making sure it is evenly spread across the surface. Afterward, cover the dish and refrigerate for at least 4 hours or overnight would be even better, as this allows the flavours to fully develop and enhance the taste.
- Roasting : When you're ready to cook, begin by heating the oven to 180°C (fan). Next, roast the chicken for 1 hour. After this, increase the heat to 220°C (fan) and continue cooking for an additional 30-35 minutes. During this time, a delicious, crispy crust will form on the outside of the chicken, ensuring a perfect, flavorful finish. Finally, once the chicken is golden and crispy, remove it from the oven and let it rest before serving.
