Once the ingredients are prepped the salad can be assembled in minutes and finished with a teaspoon of chaat masala to make the flavours sing.

Ingredients:

  • 1 small red onion finely sliced
  • 1 large carrot peel and grated
  • 1 large ripe mango peeled, stoned and diced
  • Half a cucumber diced
  • 2 garlic cloves finely chopped
  • A small green chilli seeded and finely chopped
  • Seeds of one Pomegranate
  • Handful of fresh mint leaves
  • Diced Spring onions / Scallions
  • 1 tablespoon olive oil
  • 1 teaspoon Zouk Chaat Masala
  • Generous pinch of Pink Rock Salt
  • Pinch black pepper
  • Juice of a fresh lemon or 1 tablespoon of bottled lemon juice

Method:

  1. Begin by preparing all the components
  2. Peel and dice the mango
  3. Grate the carrot
  4. Dice the cucumber
  5. Finely slice the red onion
  6. Deseed and finely slice the green chilli
  7. Peel and finely slice the garlic
  8. Put all the ingredients into a large mixing bowl with the pomegranate seeds
  9. Squeeze the fresh lemon into the bowl
  10. Add the olive oil, salt and pepper to the bowl
  11. Add the chaat masala to the bowl
  12. toss the salad together to ensure all ingredients are well mixed
  13. Add the salad to a serving bowl
  14. Check seasoning and add more lemon juice or chaat if desired
  15. Finish with a sprinkling of fresh mint and sliced scallions
